OK, so this is really a ratio recipe with a salad dressing
This makes a LOT of salad, obviously you can halve this recipe. But it keeps really well and actually gets better after 24 hours once the salt and acid get to work breaking down the cabbage.
A box grater really is a must-have in your kitchen. Food processors have a place, but the simplicity and functionality of a grater are hard to beat.
Color is the key to making this a fun and bright nutritional addition to your reperatoire. Purple carrots add a nice #anthocyanin punch. Eat the rainbow!
Slicing...there is a LOT of it. You could probably also use the grater for this or a food processor, but if you are handy with your knife I find the clean-up easier with just the knife.
Slice, slice and slice, get the slices as thin as you can muster. A bench scraper makes for easy transfers.
Asian Inspired Cabbage Slaw - Serves 10 - about 20 cups
Combine all the veggies in a large casserole dish and coat with the dressing. This is best after marinating for at least 4 hours. This dressing is great on regular salads as well. Don't be scared off by the pepper we are dressing a large quantity of vegetables. This is a really great alternative to traditional coleslaw recipes, surprise your family with this at your next gathering.
Dressing
3 oz apple cider vinegar
7 oz light oil
1/3 C. tahini
1 T Light soy sauce
1 T coconut aminos - you can sub Braggs in here
2 tsp. chili garlic paste
1 tsp. Red Boat fish sauce - YES you need this in your life
1 tsp. sesame oil - I like Kadoya from Japan
1 tsp. crushed red pepper
1/2 tsp. freshly ground black pepper
1/2 tsp. kosher salt
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1/2 tsp. onion powder
1-inch grated ginger
Veggies
1/2 cabbage finely sliced cabbage cut into thirds
2 large carrots grated in the large slot
3-5 large radishes grated in the large slot - or 1/2 daikon
1 large red pepper finely sliced then halved
2 C. snow peas trimmed and halved
4 scallions diced
a handful of cilantro - or Thai basil if cilantro freaks you out
