Oven-Baked Spaghetti Squash - Serves 4
Preheat your oven to 400°
Cut the spaghetti squash lengthwise using a sturdy paring knife, first scoring a line then rocking the blade carefully down the squash. Be CAREFUL! Scoop out the seeds and guts I like to use an ice cream scoop for this. Poke holes thoroughly through the top of the skin to allow the steam to escape, some people claim to use a fork, I like the stout knife. Lightly coat the inside of the squash with light oil and sprinkle with salt and pepper. Lay them flat on a half sheet lined with parchment paper and bake in the oven for about 40 minutes. You will know they are done when you can squish in there bums a bit. Serve with your favorite pasta topping, red sauce, pesto, or even butter with salt and pepper. This can also be a great base for chili.
