Best Oven Baked Spaghetti Squash - Easy Week Night Meal

Writer's picture: Ed StoneEd Stone

The best and easiest way to make #spaghettisquash is baked in the oven. With a couple of my simple tips, you can enjoy this carefree #easyweeknightdinner

Lazy clean-up option - my favorite

If you don't like scrubbing pans, simply line the tray with parchment paper and you are done

Poke that sucker! I like to use a small sturdy paring knife for this

This is the key to not having overly moist squash, the little holes allow the steam out so the water is not trapped.

A couple of local #CNY food favorites

I love sausage and #gianelli never disapoints. Having had the luck to meet the owner of It's A Utica THING! one day in Wegmans I always keep a jar on hand. It's a really great clean marinara, ranked #1 locally here in Central NY.

Oven-Baked Spaghetti Squash - Serves 4

Preheat your oven to 400°

Cut the spaghetti squash lengthwise using a sturdy paring knife, first scoring a line then rocking the blade carefully down the squash. Be CAREFUL! Scoop out the seeds and guts I like to use an ice cream scoop for this. Poke holes thoroughly through the top of the skin to allow the steam to escape, some people claim to use a fork, I like the stout knife. Lightly coat the inside of the squash with light oil and sprinkle with salt and pepper. Lay them flat on a half sheet lined with parchment paper and bake in the oven for about 40 minutes. You will know they are done when you can squish in there bums a bit. Serve with your favorite pasta topping, red sauce, pesto, or even butter with salt and pepper. This can also be a great base for chili.
