Meatloaf - Better than Grandma's

Dry meatloaf recipes got you down? This method is super easy and ensures a juicy slice of homestyle goodness every time. There's an unusual ingredient in lieu of the normal bread crumbs and milk, zucchini! Hey, it works in sweet bread and brownies so let's give it a try!





Get out your box grater and shred that zucchini

If you don't have a box grater you can use a spiralizer or food processor to make small shreds of zuchinni.

Better than Grandma's Meatloaf - Serves 8

Preheat your oven to 400 deg. Dice up a medium onion and shred a zucchini. Add two pounds of ground beef to a large mixing bowl and combine all the ingredients thoroughly with your hands, just get in there and get after it. Once you have everything combined, grease a 9" bread pan with some bacon fat, olive oil, or your fat of choice and put in the oven. This should take about 45 minutes but, use a meat thermometer to check for doneness, 165 deg. is what we are looking for. Let the loaf cool for at least 15 minutes to allow the juices to go back into the loaf. Serve with potatoes and gravy or slice thin and enjoy cold on a sandwich.


2 lbs. ground beef

2 eggs

1 onion chopped - about 2/3 cup

1 zucchini shredded - about 2 cups

1/4 C. Worchestershire sauce - reduced sodium

1 tsp fish sauce

1 T. tomato paste

1 tsp thyme

1 tsp garlic powder

1 tsp onion powder

1/4 cup of dried onions

1 tsp mushroom powder - optional if you have

1/2 tsp salt

1/2 tsp pepper

Looks awesome!! Appreciate the inclusion of the 15 minute rest period to let juices back into the loaf, would never have considered that. I'm hoping to see some woodstove-top cooking pictures this winter! :-)
