Sometimes an old classic combo needs an update. This will take a bit of time to oven roast the tomatoes, but it's worth the wait. Sure you could open up a can of Campbell's or Progresso, but that's not cooking.

Classic School Cafeteria Tomato Soup - serves - 4
Preheat your oven to 375° Core and slice all the tomatoes in half and arrange cut side up on a half sheet lined with parchment paper. Make sure that the paper will hold in any juices, we will want to keep all that reduced tomato juice. Bake in the oven for an hour, remove and turn them over and bake an additional 15-20 minutes until they are well browned. Let them cool for a few minutes and get your blender ready. You can of course blend these with a stick blender, but do be careful as they will be hot. Once fully blended run this through a strainer fine enough to catch the seeds right into a large saucepan. Pour any drippings into the pot and bring it to a boil and reduce for about 10 minutes. Depending on the juiciness of the tomatoes you may need to add some additional chicken stock. Add in the remaining ingredients and serve with your favorite grilled cheese.
8-9 Medium tomatoes
1 tsp Italian Seasoning
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 C heavy cream
1/2 C chicken stock
1 tsp soy sauce
salt and pepper to taste
