Purple Potato - Resistant Starch Superhero

Adding some simple resistant starch to your meals can boost the short-chain fatty acid most specifically butyrate. Why would you do this? Did you know that 90% of the cells in your are symbiotic bacteria that can create this butyrate which is what the cells that line your large intestine need to thrive?





The humble boiled and cooled potato can provide the resistant starch your body needs along with a boost of other great nutrients such vitamin c, iron and potassium. If you go with team purple you get the added benefit of all the anthocyanins that are found in blueberries and blackberries.

OK it doesn't have to be all sciencey
