Ginger Garlic Pork Chops - Serves 4
Slice 4 chops from the center of the loin to the thickness of your liking shoot for an inch a half to two inches which is ideal to retain moisture. Break down a head of broccoli into bite-sized florets and de-stem a carton of mushrooms and halve them, baby Bellas are a solid pick. Pre-heat your grill and dig out your #meatthermometer. Put the chops on the grill and set the alarm for 140 degrees. Carryover will get us to 145 anything more and you will be dry as the Atacama so don't mess this up. Turn and test the chops to ensure they all cook evenly. Mix together the wok sauce and start the broccoli in a screaming hot wok with a couple of tablespoons of oil starting to smoke. Put an aluminum tray on the upper rack of the grill to receive the broccoli. Once the oil dissipates ad half the wok sauce and keep cooking until the stems just start to turn green. Remove to the tray and repeat the process with the mushrooms until softened and browned. Pull the pork at 140, that's one hundred forty degrees, you will not get trichinosis. Let the chops rest lightly tented under foil for 5 minutes.

1 head of broccoli
1 lb of mushrooms
aluminum tray
For the Chops
liberally dust the outside of the chops with
Garlic powder
Ginger powder
salt
pepper
coat in sesame oil
Wok Sauce
2 T soy sauce - Kikkoman lower sodium
2 T light oil
1 tsp. sesame oil
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger powder
1/2 T chili garlic paste
