Truss Your Chicken for Juicy Breast Meat

All you need is some simple kitchen string and there's no need for those fancy Escoffier-esque complications. This super simple trick will yield juicier breast meat, but gives enough time for the dark meat to cook evenly.





If you can tie your shoes you got this. Seriously, simply tie a string around the center of the breast and tie your best shoelace knot...voila you just trussed a chicken! Sorry, there's no velcro shoe-lace trick yet.


No Strings Attached at the Rear End

A simple slit with your knife between the tendon and the legbone allows you to "tie" the legs together and self-truss them. Of course you can tie them, but that can be a bit fussy as well so try this tip the next time you bake a chicken.
