Weeknight Chili - Quick and Easy - Still Awesome

This is my trimmed down, I still want a real home-cooked chili dinner, but I have things to do and I really don't want to compromise on the flavor recipe. I have pared down the ingredients to just the essentials and used a trick or two here, but they should be #pantry staples and a surprise one too. This is a great #easyweeknightdinner meal and is amazing the next day. It has just the right amount of heat and if you like it hotter just add your favorite hot sauce.



Serve with some rice with Sazon con culantro y achiote for a color and flavor boost!


Pantry Staples and a Couple Cheats Save Lots of Time

Use a can of diced tomates with added chili seasoning, a can of #RO-TEL for some heat and a can of your favorite beans with all the liquid for body. Dice up some jarred #roastedredpeppers and you are in business.



Big Beefy Umami from Bouillon

One simple little teaspoon is all it takes to give this chili an all-day simmered flavor. This is a #pantrystaple you should have on hand all time. I don't always recommend a single brand for items, but Better Than Bouillon really has no substitute. There's even a #vegan version to make this into a #veganchili. This addition really makes the simplicity of this recipe work.


Easy Beefy Week Night Chili - serves 8

This really is a perfect weeknight meal with leftovers for lunch or another evening meal. Dice one medium onion, and cut up one cup of roasted red peppers. Add oil to cover the bottom of a dutch oven and brown the beef, when the beef is starting to turn add the diced onions and roasted red peppers. Once browned add the dried spices and allow them to bloom for a minute then add all the canned ingredients along with the bouillon. Bring to a boil, reduce to low cover and simmer for 30 minutes stirring every 10 minutes to prevent sticking. Serve over rice, riced cauliflower, or mashed savory sweet potatoes.


Ingredients

1 lb 80/20 ground beef or 1/2 lb chopped mushrooms and 12 oz Impossible Burger

1 onion - chopped

1 C. chopped roasted red peppers

2 T chili powder

1 tsp. dried basil

1/4 tsp. freshly ground black pepper

1/2 tsp. garlic powder

1/2 tsp. onion powder

1 tsp. Better Than Bouillon

1 can RO-TEL

1 can diced tomatoes with chili seasoning

1 can black, pinto, or kidney beans
