This basic marinade makes even boring old chicken breast taste great!
You can of course use this with any chicken parts or even sub in rabbit or turkey. Use whatever light protein you have on hand.
Zahtar Lime Chicken Marinade - about 1 cup
Combine all the ingredients into a mason jar cover and shake well. Distribute the marinade under the skin to ensure it imparts its flavor to the meat. Coat all sides of the meat for the best flavor. Sprinkle additional Zahtar on the outside of the meat, refrigerate for at least 4 hours overnight will work even better. Once the marinade has done its work, pre-heat your oven to 375° and transfer the meat to a lined baking tray. Cook until the internal temp for chicken breast is 161° or thigh meat to 175°
Marinade
zest of one lime
3 oz lime juice - typically 2 limes
5 oz light olive oil
1 tsp Zahtar spice blend
1 tsp Kosher salt
1/2 tsp ground black pepper
Browned butter or ghee underpin the great warmness from the Garam Masala!
If you have #ghee on hand use it, otherwise brown your butter in a heavy saucepan to create that rich and nutty taste.
Curried Cauliflower Rice with Chick Peas - Serves 8
Steam the cauliflower rice in the microwave as per the package instructions. Shred a large carrot with your box grater or food processor. You could even use a simple vegetable peeler as well. Once the cauli-rice is done add the carrots to them and cover for a few minutes. Bring a large saucepan to medium heat and brown the butter. Once the butter is set, add 1 tsp of Garam Masala and let it bloom for about 30 seconds. Add in the cauli-rice and carrot mixture, and chickpeas and salt. Cook uncovered for about 10 minutes or until the steam dissipates. Add the second tsp of Garam Masala to add depth, taste for salt, and adjust as necessary. Garnish with 2-3 T of chopped cilantro, or parsley, or mint if you don't like it.
Ingredients
1 lb frozen cauliflower rice - you could make your own as well
1 C. shredded carrot
1 C. drained chickpeas - 1/2 can
2 tsp butter
2 tsp Garam Masala - reserve a tsp for the end
1 tsp salt
2-3 T chopped cilantro or other herbs
